Warm Potato Salad
Ingredients/equipment required:
1/2kg chat potatoes, cut lengthwise in quarters
100-200g wild rocket salad leaves
Red onion dressing:
1/2 red onion, finely sliced
2 tbsp whole egg mayonnaise (homemade not necessary)
1 tbsp boiling water
1 tbsp olive oil
1 tbsp chopped fresh tarragon or basil
Juice from 1/2 lemon
Salt (preferrably seasalt flakes) and freshly cracked black pepper
Method:
Pour the lemon juice over the red onion and leave for 10 mins. Then add the olive oil.
Using a fork, first blend in the mayonnaise to the onion mixture, and then the boiling water, tarragon (or basil), salt and pepper.
Boil the chat potatoes until soft, but not mushy. Drain and add them to the red onion dressing. Mix gently taking care not to break the potatoes.
Place the rocket leaves bunched on top of the potatoes, and serve immediately while still warm.
