Cauliflower and leek soup
Ingredients/equipment required:
1 sml cauliflower, chopped
1 leek, sliced & washed thoroughly
½ white onion, diced small
1 lge potato (preferably Desiree) peeled and diced small
1 cup of milk (can be skim if desired)
2 cloves garlic, crushed
1 tblsp olive oil
Truffle oil (optional)
Liquidizer or handheld whiz
Method:
Heat the oil in a large pot. Add the onions, stir and cook on medium heat for about 2 mins until soft and clear.
Add the leeks, stir and cook further 2 mins, but do not allow them to get any colour – you are aiming for a white soup!
Then add the garlic, cauliflower and potato. Cover with 1 Litre of water & add the milk. Bring to the boil then simmer on low heat for about 20 mins.
Once the cauliflower is soft (check by squashing it against the side of pot using a spoon), add a generous pinch of salt and pepper to taste, and then puree in the liquidizer or with the whizz.
Serve immediately, swirl a little truffle oil on top of each bowl (optional), and eat with warm crusty bread.
